CHICKENMAKI

Ingredients:

  • Chicken - three chicken breasts cut in long thin strips (3 inches in length 1/2 inch in width is best)
  • Chili paste - 1 Tablespoon (2 Tablespoons for spicy)
  • soy sauce - 1/4 cup
  • brown sugar - 2-3 tablespoons
  • garlic powder - 1 tablespoon
  • onion - 1 chopped into medium sized pieces
  • pepper (green or red) - one chopped into medium sized pieces
  • butter/cooking spray - (1/4 cube) or non-stick cooking spray (healthy portion)
  • rice - sticky rice 2 cups cooked.
  • Lettuce - 1 head

    Saute the chicken onions and peppers in butter or cooking spray until chicken is mostly (80%) cooked. Add 1/8 of a cup of soy sauce, garlic powder, brown sugar, and the chilli paste and allow the mix to simmer for 10-15 minutes or until the liquid has evaporated. The lettuce is to be separated and washed, it is best if the leaves are not cut, in other words full leaves are easiest to deal with. To eat a chikenmaki a tablespoon (or more) of rice is placed on a piece of lettuce along with a tablespoon of the chikenmaki mix. Care must be taken in that this food can be messy. Paper towels and or napkins are a definite plus. The chilli paste and brown sugar may be altered depending on the taste preferences of the connoisseurs. This amount serves four adults.
