Caribbean Fruit Curry
Serves 4
Exotic spices and Caribbean fruit make
this curry a real Tropical treat
Ingredients:
- 2 large bananas, peeled and sliced
- 1 medium onion, skinned and finely chopped
- 4 oz. (125g) tomato, skinned and sliced
- 8 oz. (225g) cooking apples, cut in wedges
- 2 oz. (50g) sultanas (or golden raisins)
- 1 cardamom seed, husk removed
- half a piece of fresh ginger, chopped
- 1 bay leaf
- 1 clove
- 2 tbsps. oil
- 1 oz. (925g) butter
- grated rind and juice of 1 lemon
- 1 tsp. salt
- 2 oz. (50g) cashew nuts
- 1 tbsp. cumin seed
- 1 tbsp. turmeric

Cooking Instructions:
- Gently heat the butter and oil in a heavy based pan, add the bay
leaf all the spices and cook gently for 5 minutes
- Add the onion and tomato to the pan, stir then cover and cook for
another 5 minutes
- Add all the remaining ingredients, cover and cook gently until the
fruit is just soft
- Transfer to a warmed dish and serve with rice
